Welcome, today I’ll be showing you an amazing Keto Christmas Breakfast recipe named “Keto Eggnog Chaffles”.

I like to make eggnog for holiday parties or for Christmas Eve.

And sometimes I have leftovers so I’m going to show you how to make a Keto Eggnog Chaffle with all of your leftover eggnogs.

A chaffle is a low carb waffle mostly made out of egg and cheese.

In this recipe, I use cream cheese, the cheese provides structure to help hold the chaffle together.

These eggnog chaffles are delicious and very easy to make, and they are topped with an eggnog cream sauce too!

Definitely a recipe you can make on Christmas morning that your family with love – plus the kids won’t get all crack out on sugar too!

How to make Keto Eggnog Chaffles in 5 minutes?

So let’s get started to make the eggnog chaffle.

It does require that you pre-make some keto eggnog, but don’t worry the eggnog only takes about 5 minutes to make. So if you didn’t make any eggnog ahead of time you can still make it Christmas morning, if you want to have these delicious eggnog chaffles.

And we’re also going to be topping our chaffles with a cream sauce so make sure
you stay tuned to see how I make that cream sauce.

In a small bowl, add one egg, one ounce of cream cheese, 1/4 cup of keto eggnog, 2 tablespoons of coconut flour, 2 teaspoons of monk fruit, half a teaspoon of baking powder, and a quarter teaspoon of rum extract.

Also add in a pinch of salt and a pinch of nutmeg just for some flavor.

You want to mix these together and I recommend using an electric mixer just because it gets
all of that cream cheese all broken up and smooth.

Once batters combined we’re gonna pour it in a waffle maker.

You want to pour about a third of your batter into the waffle maker close it and let it cook for a couple of minutes.

Now when it comes to chaffles are made using cream cheese they don’t really crisp up like a regular waffle, they stay like a spongy cake like consistency.

Now that our eggnog chaffles are done cooking it’s time to make that eggnog cream sauce.

In a small bowl add a quarter cup of heavy whipping cream and you want to start beating this until it starts to get a little foamy.

And then add in 1/4 cup of keto eggnog, 2 teaspoons of powdered erythritol, a quarter teaspoon of rum extract and a pinch of nutmeg and you want to continue whipping this together until it’s slightly thickened.

And then pour this over your eggnog chaffles, you don’t have to pour the entire cream sauce. Make sure to make this on Christmas mornings, I am sure you’ll love these Eggnog Chaffles.

Ingredients

For eggnog chaffles

  • 1 egg
  • 1 Oz cream cheese
  • ¼ cup eggnog keto
  • 2 tbsp coconut flour
  • 2 tsp monk fruit
  • ½ tsp baking powder
  • ¼ tsp rum extract
  • pinch of salt & nutmeg

For eggnog creme

  • ¼ cup heavy whipping cream
  • ¼ cup egg nog keto
  • 2 tsp erythritol powdered
  • ¼ tsp rum extract
  • pinch of nutmeg

Instructions

  • Preheat waffle maker on medium heat and mix all ingredients needed for eggnog chaffles.
  • Pour eggnog chaffles batter on the center of the waffle maker. Cover the lid and cook for 3-5 minutes or until nicely golden brown in color.
  • For the creme, add whipping cream into a mixing bowl and whisk until turns foamy. Now add remaining creme ingredients and mix well until creamy consistency. In the end, add nutmeg and done.
  • Pour this creme on the soft eggnog and a dash of nutmeg powder and enjoy your keto Christmas breakfast.
