And I will show you two different decoration options or serving options for these little cakes.

Oh, and I love strawberries because one can create anything with them. So today is a very simple strawberry cheesecake recipe that does not require baking.

And it tastes really great with the fresh strawberry puree or the strawberry sauce.

How to make easy No Bake Strawberry Cheesecake

Now let’s get started our Mini No-Bake Strawberry Cheesecake Recipe.

Biscuit base for No-bake Strawberry Cheesecake:

First, what you want to do is to crush the cookies, and also actually before you start crushing the cookies you want to melt the butter.

Crush the cookies.

You can do that in a blender or you can also put the cookies into a plastic bag and crush them with a rolling pin.

So, now just gonna pour over the cold butter and gonna mix it in with a spatula.

And the final mix, do with your hands. Just to make sure that it’s all well mixed and combined with the butter so that you don’t have any dry spots.

Also at this point you kind of get to test whether there’s enough butter, so just mix first so it’s all well combined.

And now just test whether it holds together.

So press really hard and if it holds together then there is enough butter and it’s ready.

Pouring our No-bake Strawberry Cheesecake base in Cupcake Tray:

And, now divide it between cupcake tips.

So take a cupcake trail laid with some paper cupcake forms, and start spooning the cake crumb into it.

And then press it in, so that it kind of forms the base. So press it in really hard otherwise the base will just crumble.

This is also why you want to place the paper forms into the actual baking tin so that it kind of holds the paper tin form while you press the cookie crumb base.

So our cookie base is ready and we’re not gonna refrigerate this or do anything with it because this is a no-bake strawberry cheesecake recipe and it will be going in the fridge to cool anyway.

So we’re not gonna cool the base separately.

Filling for No-Bake Strawberry Cheesecake:

And now we’re just going to move to make the filling.

So the actual cheesecake filling as I said it’s a no-bake strawberry cheesecake so it’s going to be just chilled not baked.

So add the cream cheese into the mixing bowl and what you also want to do you want to soften it.

So just mix it a little bit with the spatula so that it becomes really soft and the consistency is really creamy.

Can I used regular cream cheese instead of flavored one?

If you cannot find strawberry cream cheese then you can use just regular cream cheese you can use it as it is and then make the topping so it will be like a natural flavored or you can mix some strawberry jam or something like that into the cream cheese.

Can I make Strawberry cream cheese at home?

Maybe yes, I mean it will taste almost same.

So what you have to do is, take 150 grams of naturally flavored cream cheese and add 50 grams for strawberry jam and mix well.

Why you want to whip the cream cheese?

You wanna do this is because this helps you mix in the whipping cream, it will be easy for you to mix the cream cheese them with the cream and there will be no lumps of cream cheese in your filling.

Whipping cream for the top creamy layer:

So then take about 200g/300ml of whipping cream whip it until soft peaks. So you want to whip the cream until it starts to get stiff but it’s not too stiff.

And then we are just going to combine cream with the cream cheese.

Before we do that, add 1 teaspoon of vanilla because and mix in the well.

And then start adding the whipped cream, add about half first this just helps you to mix it in well so that there are no lumps.

And when it’s all nicely combined, so now add the rest of the cream and continue mixing.

Can I add food color to the cream mixture?

If your color is very pale pink and if you would want some pink color to your
filling you could add a really tiny bit of food color. (I don’t recommend using food color, try to keep it natural the way it is.)

How to add gelatin to the cream cheese mixture?

Before you move on to making or whipping the cream, soak the gelatin leaves.

So take three gelatin leaves and soak them for about 5-10 minutes until they have softened a little bit.

*If you don’t want to use gelatin or you cannot use gelatin then you can also use agar-agar instead.*

So when it’s properly soaked and it’s really soft, then strain the water and add a little bit of hot water.

So add boiling water and just melt the gelatin leaves, so just want to add as much or as little of the hot water in order to melt the gelatin completely.

Add a little bit of the cream cheese into the gelatin mix, about 2 tablespoons, and give it a mix this kind of cools it a little bit.

And then you want to add that in your rest of the filling and mix it in quickly so adding it and mixing this in.

Mix it quite vigorously and fast to make sure you get everything mixed in and so that you get a nice and smooth cream mix.

Now take our prepared cookie bases and spoon the filling into the cases.

So most of the work is done now you just want to chill these in the fridge for at least 5-6 hours.

Strawberry Puree for topping/serving?

Just take some fresh strawberries and then add a little bit of sugar to this and what you wanna next, smash the strawberries with an immersion blender.

Continue processing them until it’s kind of a fresh sauce, you don’t want any pieces in there. So what you want to have in the end is the smooth fresh strawberry puree/sauce.

How to serve our No-bake Strawberry Cheesecake?

At last, we are going to decorate the mini no-bake strawberry cheesecake with strawberry sauce and some fresh strawberries.

Chill the little cheesecakes overnight but you can also chill them for less time for 5-6 hours.

Decorate them with just some strawberries and some fresh mint leaves, then serve with a little bit of that strawberry sauce.

Mini No-Bake Strawberry Cheesecake

This no-bake strawberry cheesecake is not exactly similar to the baked cheesecakes. This one is lighter and really soft, and it’s nice and creamy.

  • 90 g whole wheat butter cookies
  • 40 g butter
  • 200 g strawberry cream cheese at room temperature
  • 200 g whipping cream 30% fat
  • 1 tsp vanilla paste/extract
  • 20 strawberries small
  • 3-4 tsp sugar
  • strawberries for decoration
  • mint leaves (fresh) for decoration


  • Melt the butter and leave it aside and crush butter cookies in a processor or fill in a plastic bag and crush it with a rolling pin and make a fine powder.
  • In a mixing bowl, add cookies powder and add cooled butter and mix well with hands until it forms a hard and grainy texture to make the cheesecake base.
  • Now lay 10-12 paper cupcakes into a cupcake/muffin tray and pour our cookie powder and press with the finger to form a tight and firm base and leave it aside.
  • To make the filling soften the cream cheese in a bowl with a whisking machine or with a spatula, and then add vanilla and mix again.
  • Now in a mixing bowl/cup add whipping cream and whisk until it forms a soft peak and then, add it to the cream cheese mixture into two parts so that it gets mixed well.
  • Now strain the water from the gelatin and add 2 tsp or as much as required water to dissolve the gelatin and then add it to the filling mixture. Mix fast and vigorously so that the gelatin gets mixed well with the mixture.
  • Now fill the cupcakes to almost top and then let the cheesecake sit in the fridge for at least 5-6 hours.
  • To make the strawberry sauce, blend the strawberries with sugar added into a jar with the help of an immersion blender.
  • Remove the cheesecakes from the fridge and remove the cupcake cover and serve with some sliced strawberries and strawberry sauce.


  • Before adding sugar to cream cheese, be careful to read sugar instructions as flavored cream cheese contains sugar, so be careful.
  • Make the strawberry sauce before serving the cream cheese.
